Pork Rib Chops with Apple Butter BBQ Sauce

I was at the market the other day and they had some fresh Pork Rib Chops on sale so I decided I’d pick some up to have for supper. We love Pork Rib Chops, if cooked properly they turn out so moist and tender. I got in the kitchen and realized I didn’t have any BBQ Sauce, aww nuts! I wanted to finish them off with a light BBQ glaze. Geez … what to do? I spied a nice jar of Apple Butter that I got at the Farmer’s Market awhile back so I decided to use an Apple Butter type sauce. Right?, apples and pork are always a good pair. So, I got to thinking how would I prepare this Apple Butter BBQ sauce? I added some Chipolte seasoning, thyme, ground coriander and a little cumin for some smokiness. Man, I have to tell you … that was one of the best BBQ sauces I’ve ever made! So much so, that now when I BBQ Mr. R always asks me if I’m using that really awesome sauce I made last time. The Apple Butter BBQ Sauce has all the components needed in a great BBQ sauce. It was sweet, slightly spicy and had a nice freshness with the addition of some lemon zest. Man, my mouth is watering now …

Pork Rib Chops with Apple Butter BBQ Sauce
  1. 4 Pork Loin Chops (bone in)
  2. 1 1/2 cups of Apple Butter
  3. 1 1/2 tea Chipolte Seasoning
  4. 1 tea Ground Coriander
  5. 1 tea Thyme
  6. 1/2 tea Cumin
  7. 1 tea Garlic Powder
  8. 1 tea Onion Powder
  9. Zest of 1 Lemon
  10. Sea Salt and Pepper, to taste
  11. A swirl of Extra Virgin Olive Oil (to sear Pork Rib Chops)
For the Apple Butter BBQ Sauce
  1. In a small sauce pan, add all the ingredients
  2. Mix using a small whisk
  3. Bring to a slight boil then simmering on low until the Pork Rib Chops have been seared
For the Pork Rib Chops
  1. Season both sides with sea salt and pepper
  2. Heat a cast iron pan, add a swirl of EVOO
  3. Add the Pork Rib Chops and sear each side on medium high (approximately 5 minutes per side)
  4. Remove from heat
  5. Generously brush both sides of the Pork Rib Chops with the Apple Butter BBQ Sauce
  6. Place cast iron pan in the oven under the broiler (place the oven rack on the second slot from the top)
  7. Broil the Pork Rib Chops approximately 4 minutes on each side basting with the Apple Butter BBQ Sauce before turning
  8. When the Pork Rib Chops are done let rest for approximately 10 to 15 minutes before serving
  1. Cooking times can vary depending on the thickness of the Pork Rib Chops
