If you work at home like I do, lunchtime can be difficult. I need easy, healthy and quick otherwise I end up skipping lunch altogether. That’s not good, right?
One of my favorites are Eggs and Avocado with a side of Fermented Zucchini. It took me awhile to warm up to the whole eggs with avocados thing. It just seemed like a really odd combination. However, one day I was starving, you know the kinda starving that makes you want to rummage through the refrigerator and eat one of everything. Only on this day, I was faced with a very empty refrigerator which doesn’t happen very often around here but hey I was busy and going to the market just didn’t fit into my schedule.
I had eggs and a lone avocado that needed to be eaten so I decided to give this egg and avocado thing to whirl! O.M.G. I was totally surprised at how delicious this combination of flavors where!
We all know that eggs are an excellent source of protein, but did you also know:

While a recipe is not really called for here I will give you a little instruction:
- Peel and slice a ripe, whole avocado
- In a small cast iron pan add a swirl of olive oil and lightly fry 2 eggs (preferably organic, free range) or as an alternative you can poach, scramble or whatever your favorite way to eat your eggs might be
- You can plate it on a small bed of greens with pea shoots or add a side of fermented vegetables (seen in photo). If your curious as to why I eat fermented vegetables you can read about it here .
- Garnish with a few pinches of Maldon Salt and Black Cracked Pepper
There is just something about the creamy avocado, the rich runny egg yolk and the crispness of the vegetables that bring this whole dish together.
It takes just a few minutes to put this dish together and with all the beautiful health benefits that come with it, it’s the perfect work at home lunch idea!
